Aval Nanachathu | Sweetened Rice Flakes



It's one of the healthy and yummy recipe of Kerala Cuisine. This recipe serves as a best after school snack for your kids and it requires just 5 to 10 minutes of preparation time.
I have used beaten red rice flakes, you can substitute it with white rice flakes too, however the red one is rich in Iron content.
Also you can substitute sugar instead of Jaggery.
I like to add more milk and have it like... how we have cornflakes :), if you too prefer that way go ahead and add one more cup of milk to this recipe.

Ingredients:

Aval / Poha / Beaten Rice flakes (Red or White) - 1 Cup
Jaggery - 1/2 Cup
Fresh Grated coconut - 1/2 cup
Milk - Approximately 2 cups / To mix the Aval
Cardamon - 2 pinch
Banana - 1 no (Sliced)


Method:











Wash the Aval and drain the water completely.











Mix the Aval with Jaggery, Cardamom, Grated coconut and milk
Allow to get the aval soaked in milk for 5 to 10 minutes.










Now the Sweet Rice Flake is Ready. Serve it with Banana slices.

Pomegranate Lemonade


Pomegranate Lemonade is a simple summer cooler. You can substitute lemon juice with Spirit or Limca too, but i prefer to add natural lemon.

Being pregnant daily i use to have pomegranate so, everyday i think to make something different with this fruit and i find this drink to be best for this summer season and it serves as a best thirst quencher.

Ingredients:

Pomegranate – 1
Lemon Juice – ½ Lemon
Sugar – as required
water  - if required.

Method:

Extract Pomegranate juice using juicer.
If you are using mixer filter the seeds and extract juice alone.










Add required amount of sugar and water if required.










And squeeze the ½ lemon to it, mix well and serve it chilled.

Sweet Lassi



 
Whenever I go to dabba I never forget to taste this lassi there...To get the exact taste of Lassi you have to make curd at home. I used full cream milk to set curd and added ¼ teaspoon sugar to it while setting this will make the curd set well.

R loves to have this lassi after having spicy, heavy, non vegetarian meals on Sunday. Sometimes he makes it by himself when I am held up with some other work.

This is a simple cardamom flavored lassi, quick and easy to make at home.







































Ingredients:

Thick Curd – 1 cup
Cardamom Powder – 1 or 2 pinch
Badam – 1 teaspoon (Chopped)
Sugar as required

Method:

In a bowl add Curd, Sugar and Cardamom powder.
Mix it well and pour it in a lassi glass.
Top it with Chopped Badam or you can even add dry fruits.
Serve it chilled.

Oats Paal Payasam | Oats Milk Pudding


Thought to post some simple payasam / Kheer for Vishu...At the same time wanna make some thing with oats, as i have big packet of oats lying in my pantry for long so, came up with an idea of making Oats Payasam. Here myself and my mother-inlaw tasted it and we both liked the taste of this it.
It's very easy and quick to make dessert  and off course healthy too.


Ingredients:

Oats - 1/2 cup
Milk - 2 cups
Sugar - 1/2 cup
Cardamon powder - few pinch
Nuts and Raisins - 1 tablespoon
Ghee - 1 tablespoon

Method:












  • Heat a pan with ghee and roast nuts and raisins and keep it aside.











  • In the same pan add oats and roast it for 2 minutes.












  • Add the boiled milk and sugar to it and mix well.












  • Add cardamon powder and keep stiring until the oats gets cooked well.













  • Finally add the roasted nuts, raisins and switch it off.
  • Serve it hot or chilled.

Paal Payasam Recipe | Rice Kheer







































Paal payasam is a traditional Indian dessert served for any occasion or festival. Most of our south Indian feast will never get completes without this delicious classic dessert.
Tamil New Year is on its way, so I have planned to post this classic Paal Payasam in my blog to celebrate the New Year. Wishing you all very happy and prosperous New Year!

Actually the original recipe requires cooking of rice in milk in an open pan for long time, here I am giving you a easy and quick method of making Paal Payasam with pressure cooker method, however you don’t need to compromise on taste…it tastes equally delicious.



Ingredients:

Basmati Rice – 1 tablespoon
Milk – ½ litre
Water – 2 cup
Nuts and Raisins – as required
Sugar – 3/4 cup
Ghee – 1 tablespoon
Cardamom – 2 nos.


Method:











Heat a pan with a table spoon of ghee then fry nuts, raisins and keep it aside.
In the remaining ghee add the washed and well drained rice and fry for 1 minute.








Add a cup of water and a cup of milk and pressure cook for 2 whistles.








Once the pressure releases, open the pan and add remaining milk, cardamon powder, sugar, fried nuts and raisins.
Simmer the flame and cook for 4 to 5 minutes, This Payasam will thicken when it is cooled down so switch off accordingly.
Note: To get creamy texture, you can add the rice by grinding it coarsely in a mixer.

Pomegranate Banana Milkshake



Summer on its way...Looking for some healthy Shakes for breakfast? Here it is ...It's a simple milkshake even your kids can make it easily. It's absolutely delicious and nutritious drink.

You can use any variety of banana, here i used red banana. Instead of milk you can add a scoop of  ice cream also.


Ingredients:

Pomegranate - 1
Banana - 1
Cold Milk - 2 cups
Sugar - as required

Method:

De-skin Pomegranate and take the pearls separately then, slice banana.
In a blender add both the fruits, some sugar (if required) and add cold milk.
Blend it well and serve it chilled.

Beetroot Paratha



Though cooking is my passion, my blog get back seat when i held up with some other priorities in my family. Now i don't want this to happen regularly and would like to do some pre plan and schedule the post and to treat my blog bit special...Feeling happy about my new discussion and would like to hold on with it. Right now i scheduled one post per week.

Here about this week recipe....I always like to make Parathas, This Beetroot Paratha was in my mind for long and finally i tried my hands on it a month back. It's a colorful, delicious and healthy Paratha, sure your kids will like it.
And mixing beetroot with flour make it more moisture and the Paratha comes so soft and remains soft for longer time so, this is apt for lunch box also.

Ingredients:

Beetroot - 3/4 cup (grated)
Wheat Flour - 1 and 1/2 cup
Jeera - 1 teaspoon
Onion - 1 no. (chopped)
Coriander - 1 tablespoon (chopped)
Chilly powder - 1/2 teaspoon
Garam Masala - 1/4 teaspoon
Oil to toast
Salt to taste

Method:








  • In a shallow vessel add Wheat flour, Coriander, Jeera, Chopped onion, Chopped Coriander, Chilly powder, Garam Masala powder and salt.
  • Mix all the ingredients well and keep it aside for 30 minutes, so that the beetroot will emit some moisture into the flour.
  • Add enough water (take care in quantity of water because the beetroot already emits some water from it) and few teaspoon oil and knead the flour into soft dough.
  • Take a small portion from dough and make a ball, roll it into flat round roti.
  • If required dust dry flour while rolling.
  • Heat a tawa and cook the rolled dough both the side until it is done.
  • Serve it with Raita.
